And we have a winner...

A big Arrigato Gozaimasu to John McAfee, who correctly identified my
culprit as having the Stagecraft List email address filed as a contact in
my iPhone's Contacts list. Apparently it took that addy as a
last-takes-precidence address for plugging into the FROM slot, on all
incoming messages.

Problem ID'ed; problem solved. Still torn between Mail.app and
Gmail.app.... Depends on the filters.
