Turning corners is normally the problem. Getting them into the main entrance is not an issue, since they will have wide isles to their assembly areas. But, getting down the isle to the stage is quite another matter. Assume that it will often be required to lift the item over the seats, and up to stage level. Other venues may include places like banquet halls. 8' long is a number you can be confident will fit in most situations, though I realize that this may be shorter than is practical for your design. Also,weight should be something that 2 high-school guys can maneuver. Height when assembled is another issue. Assume in some situations that you may only have a 7'6" ceiling.
Consider making it so that most of the time, it is kept together, but can optionally be further disassembled to facilitate difficult load-in or low ceiling conditions.
