Try sticking a dummy load on the output of the dimmer in addition to the
LED power supply. Shouldn't need to be much, maybe a 25 watt lamp.
Some dimmers get wonky when the load of the channel is very small.
Consider a LED driver that is directly DMX controllable rather than
indirectly controlling the LED driver via the dimmer powering it.
