FWIW,
You can't consider the students  doing service learning attached to
courses as "slave labor"  They should be there to learn and to gain
experience.  You will have to do a lot of active teaching..."This is
the power miter box, this is how you use it...remember to use your
goggles when cutting...this is a bevel set...use it like this to get
the angle...transfer it to the power miter box like this...adjust the
angle of the power miter box angle and lock it off like this...make
the cut and take it over to the set to verify that the angle and
length are right...okay, now you do the other one and I'll watch and
help you if you get stuck".  Frankly, it is often faster to do it
yourself...but that's not the point of the exercise.

Pair service learning students with work-study or majors with
experience taking practicum.  Let the more advanced students do some
of the training.  They will learn more by teaching skills to someone
else than by doing it themselves.

When there are simplistic, repetitive tasks (sweeping, sorting
hardware, cleaning lumber, washing paint buckets, etc)...make sure
that everyone (skilled and unskilled) takes a turn and try not to
stick the same service learning student with this type of task for all
or even much of their experience.

It all takes energy, but the dividend should be satisfied
customers...er...students.
