The performance will be identical.  The only difference will be how many Amps you draw.
Many productions (Rock and Roll tours, and many event companies) use 208v distros to decrease the amount of cable they need to run.
Voltage drop is not usually much of an issue in AC power systems, but how much cable you have to carry around, and the setup and strike time used to lay it out is always an issue.

The Quantum Profile draws 4.8A at 120v, and only 2.8A at 208v.  This means you can safely plug 3 into the same 20A circuit at 120v (always leave some overhead), and 5 fixtures can share the same circuit at 208v... 6, if you're into living dangerously (NOT RECOMMENDED).

 It _can_ run on 120v or 208v.  In 'real world' use will it matter which?  Is 208v any better?
