I've done this show, and, against your desires, we used actual cottage
cheese.  Had the actor stand in a garbage can, and had cottage cheese
applied to his head, face, costume, etc..... yes, it was gross... yes, it
got all over the set.... but not much back stage, as he had the garbage
can, placed on sheet plastic.

On that show, the director (Alan Shearman, known for his endless gaggery in
shows) made food abuse a major part of the show... the first act was SO
messy, we had a special "cleaning crew" for the intermission.  Then, of
course, for the end of the show as well.
