There have been a lot of great suggestions here but not all of them will be weight-bearing. I was faced with a similar challenge in college. We needed piles of oversized books that could hold the weight of an actor and at times a dancer. 

Our solution was to build essentially rehearsal cubes in sizes shapes. This gave us good durability on our "stacks" and provided a lot of mounting surface. 

Then we used sonotube in various sizes to replicate spines and a combination of insulation tubing and carved Styrofoam for the pages. If you have it you could use vaccuform for this as well. Just make sure you have enough flat surface adhere to the wood. 

TIP do the sonotube first and then tubing and wrap it all the way around the surface before you glue it so bindings for the cover and back are at the same location on both sides of the cube. I didn't do this and regretted it.  

THEN we wrapped them in muslin that had been coated in a white glue and water mixture and got good and messy carefully pressing the muslin into all the nooks and crannies. 
This gave us a fabric like surface that held paint really well and provided durability for the foam and tubing. 

Took some time but when finished the looked fantastic and were super durable.
