And if you don't wash the eggs, they're good for at least a month
sitting on the counter at room temp, maybe longer.  As soon as you wash
them you have to refrigerate them as they'll start to spoil.

Since city folks like nice clean eggs, they have to buy lots of
refrigeration equipment to go along with them.
